    1# ground lean turkey
    2 cups water
    2 cups instant brown rice
    1 cup frozen sweet corn kernals
    2 tsp low sodium taco seasoning
    2 cups (or 1 jar) salsa


Brown ground turkey in large skillet. Drain any excess fat off. Add 2 cups water & 2 cups brown rice, bring to a boil. Once boiling, add 1 c. frozen kernals, taco seasoning, & salsa. After it comes to a boil again, cover, reduce heat & let simmer 5-10 min, until rice is tender.

Makes approx. (6) 1 cup servings.

  • Super easy, definitely a keeper! I accidently added the entire package of taco seasoning, but it was still very good, and filling. Also used a jar of corn black bean salsa in place of regular salsa. - 6/27/14

  • I'm always afraid to try new things, but this sounded pretty good so I thought I'd give it a try. The family loved it! We did top with crushed tortilla chips and a sprinkle of shredded cheese. I think next time I will try adding some pinto beans. - 2/23/12

  • We really liked this dish! It ends up tasting a lot like tacos, so we added a few blue corn chips and lettuce to make taco salad. The only problem we had with ours was that the rice did not get as soft as it needed to, but overall it was delicious and made enough to last the week! - 11/29/11

  • Faaaantastic! I'm always looking for quick, healthy meals fit for an 18month old. He loves this! I, too, added black beans because, for me, if it's Mexian-like, it has to contain beans. :-) Plus, I could use more fiber. This will be a new "go-to" recipe in my house.
