Introduction
This is super easy and one of my favorite meals. This is super easy and one of my favorite meals.Number of Servings: 6
Ingredients

2 lbs. chicken thighs
2 medium zucchini or yellow squash, halved and sliced
2 C. chopped onion
2.5 T olive oil
2 garlic cloves, minced
2 T curry powder
2 T all-purpose flour
4 C canned tomatoes
1/2 C seedless raisins
Cooked Cous Cous
Directions
1. Remove skin and trim all visible fat from chicken thighs, set chicken aside.
2. In a 2.5 qt. casserole dish, combine zucchini, onion, oil and garlic; microwave, covered, on high for 3 minutes. Stir in curry powder and flour until blended. Add tomatoes with their liquid, breaking up tomatoes with spoon, and raisins.
3. Add chicken thighs, arranging meatier portions toward outer edges of casserold. Microwave, covered, 26 minutes, until chicken and zucchini are tender; rearranging chicken and stirring halfway through cooking.
4. To serve, spoon over top of whatever amount of cous cous you would like. Cous cous calories are not factored in to this recipe.
I used 2.15 lbs. of chicken (just what it happened to weigh) and it was 6 thighs. I used one thigh per person and a very generous (a cup???) of "sauce" per person. I put it over one cup of cous cous, which in my book is about 176 calories more.
