Introduction

This marinade works well for tacos or fajitas. We serve it with 2 soft corn tortillas per taco as they tend to rip easily. Calories can be reduced by only using one per taco. Ingredients

    MARINADE
    2 tbs vinegar
    2 tbs olive oil
    1/4 cup lime juice
    8 oz orange juice (peach or mango will work as well)
    2 tbs ground cumin
    1 tbs chipotle chili powder
    1 tbs paprika
    1 tbs garlic powder


    8 chicken thighs, skin, bones and fat removed
    1 large onion, sliced
    1 yellow bell pepper, sliced
    1 tbs ground cumin
    2 tbs olive oil

    20 tortillas, soft corn
    3 avacados, sliced and squired with lime juice.

Directions

Mix the first 8 ingredients in a medium mixing bowl and stir well until all spices are mixed together. Rinse the chicken and pat dry. Place the chicken in a large zipped bag and pour the marinade into the bag. Seal and mix well. Place on a plate in the refrigerator for at least 1 hour.

Mix the remaining tbs ground cumin and 2 tbs olive oil with the sliced onion and bell pepper in a zip lock bag.

Grill the chicken over medium heat until done. When the chicken is half done, put the onions and peppers on the grill or in a skillet over medium heat. Cook until the onions are opaque. Remove from heat when done and let the chicken set for 5-10 minutes. Slice the chicken and serve on warm corn tortillas with sliced avocado and grilled onions and peppers. Serve with black beans and/or brown rice.

Makes 10 tacos (10 servings)
You may also use flour tortillas and make fajitas with the same ingredients.
