Ingredients

    1lb of trimmed pork loin or tenderloin
    1/4 cup tomato pesto
    1cup fresh spinach
    1/4 reduced fat feta
    Canola or olive oil spray
    1/4 teaspoon black pepper
    1 can italian style diced tomato (14.5 ounces)

Directions

Pound pork flattish and to an even thickness (wrap in plastic wrap first!)
Cut pork in half but not all the way through the last side
Spread pesto, feta, and spinach evenly on pork.
Close pork and secure with wooden picks
Spray pork with the cooking spray and sprinkle pepper on top
Pour tomatoes around and on top of pork

Cook at 500 degrees F for 22 minutes or until done.

Yields five servings of 3oz pieces of pork.
