Great classic one- pot chili recipe, with a few secret ingredients. Great classic one- pot chili recipe, with a few secret ingredients.
Number of Servings: 12


    1 lb. extra lean ground beef
    1 medium onion, chopped
    3 cloves garlic, minced
    1 can black beans
    1 can pinto beans, drained and rinsed
    1 can red kidney beans, drained and rinsed
    3 canned chiles in adobo sauce, finely chopped
    6 cups (about 1 qt. + I small can) stewed tomatoes
    4 Tbs. chili powder
    2 tsp. cumin
    1 tsp. cayenne pepper (or to taste)
    1/2 Tbs. salt (optional)


In a large pot, brown and drain ground beef. Add onion and garlic. Saute until tender and aromatic. Add beans, chiles, and tomatoes. (I like to drain the pinto and kidney beans, but include the sauce from the black beans. It makes a heartier chili.) Add spices, and stir to thoroughly incorporate. Cook covered for 30-45 minutes on med-low heat, stirring occasionally.

*Note: This chili is ready to eat as soon as it's heated through (about 10 minutes), but it's better the longer you let it cook. For a thicker chili, cook uncovered.

Makes 8-10 1-cup servings.
