    1 1/4 cup flax seed meal
    2 teaspoons baking powder
    1 tablespoon cinnamon
    1 teaspoon nutmeg
    1/2 teaspoon salt
    1/2 cup Splenda granular
    1/4 cup sugar
    1/2 cup pecans, chopped
    1/2 cup raisins
    1 tablespoon vanilla extract
    4 large eggs, beaten
    1/2 cup water
    1/4 cup canola oil
    1/2 cup applesauce, unsweetened
    4 tablespoons White House Apple Butter


Preheat oven to 350 F. Grease muffin tins very well (spray canola oil worked well). Makes 18 regular size muffins, or 48 mini-muffins.

Mix dry ingredients together.
Mix wet ingredients together. Then stir all ingredients together.
Let batter stand 10 minutes, then put into the muffin pan and bake for about 15 minutes until toothpick comes out clean. Let muffins cool for several minutes before removing from pan.

For mini-muffins, bake for 10-12 mins. You may want to check muffins after 8-10 mins.
