    Oat Bran, 1/2 cup
    Pillsbury Whole Wheat Flour, 1 cup
    **Flax Seed Meal (ground flax), 1/4 cup
    Baking Soda, 1 tsp (remove)
    Baking Powder, 1 1/2 tsp
    Cinnamon, ground, 1 tsp
    Nutmeg, ground, 1 tsp
    Country Creek Farms Egg Whites, 2
    Smart Balance Omega oil blend, 1/4 cup
    Unsweetened Applesauce 1/3 cup
    Granulated Sugar, 1/4 cup (remove)
    Pecans, 1/4 cup, chopped


Preheat oven to 350 degrees. In a large bowl, whisk together all dry ingredients except pecans.

In a separate bowl, whisk together egg and oil until smooth. Stir in applesauce and sugar. Combine wet and dry ingredients and mix until moistened. Fold in pecans.

Spoon batter into muffin cups (paper lined or spray coated). Bake for 22-25 minutes or until top springs back when lightly touched.
