Number of Servings: 16


    Spelt Flour, 2 cup
    Baking Powder, 5 tsp
    Splenda No Calorie Sweetener, 2 Tbsp
    Flax Seed Meal (ground flax), 1 Tbsp
    Greek Yogurt 1/4 cup
    Water, 2 cup


In a large bowl, combine all dry ingredients. Add yogurt and water, stirring until batter is smooth.

Heat griddle or large frying pan over medium heat until a drop of water dances before evaporating, and spray with cooking spray.

Pour and cook pancakes till dry around the edges, and flip. Cook till done. Makes about 16 palm-sized pancakes.

Optional: stir in frozen blueberries, chocolate chips, or chopped pecans.

  • This is a good recipe, I prefer to eat clean, I substituted the sweetener for sucanant. I also pureed 3 strawberries and 1/2 of a large kiwi for a topping. - 3/24/11
