    4 eggs
    1/3 cup of nonfat milk
    5 frozen hash brown patties, broken into pieces
    1/2 cup chopped green bell pepper
    1/3 cup chopped onion
    3 turkey sausage patties,cooked/ crumbled
    2/3 cup cheddar cheese
    salt/pepper to taste


Preheat the oven to 400*
In a medium mixing bowl, mix the hash brown pieces with one egg. Spray the bottom of a large casserole dish and cover with the egg-covered hash brown pieces. Add salt and pepper to taste (optional) Bake for 20 min.

Meanwhile chop the bell pepper and onion, and set aside.
In a microwave safe bowl, add the 3 eggs and the milk, beat well, and cook in microwave on high for 2 minutes. After 2 minutes, remove, stir/break up egg mixture, and return to microwave for 2 more minutes. Remove and stir again, breaking up the egg mixture.

Remove hash brown crust from oven. Cover evenly with the egg mixture. Then, top with the bell pepper, onion, and the shredded cheese. Return the casserole to the oven to bake at 400* for another 10 minutes.

Serves 8 people.
