This makes six 1/4 cup panckakes, they are filling and taste wonderful! This makes six 1/4 cup panckakes, they are filling and taste wonderful!
Number of Servings: 6


    1 Cup dry oatmeal
    1 Cup 2% cottage Cheese
    4 Egg Whites
    1 tsp baking powder
    1 tsp vanilla
    1/2 tsp salt
    1 packet Stevia


Blend everythign together except oats. (I use a Vitamix, makes it creamy and smooth), Add oats and blend for a little bit, just to blend, you want the batter lumpy.

If you are adding fruit, add them whole to the batter after you blend it or your batter will be to liquidy. Using 2% cottage cheese, this rec. wasn't liquidy at all.

Place 1/4 cup of batter in pan, they take a while to cook.. I cook this batch, it makes 6 pancakes and put them in the fridge for the week. Yummy!
