Ingredients

    1 Idaho Potatoe
    1/2 cup frozen carrot and peas
    2 tbsp shredded cheese
    1 tbsp mayo
    1 tsp butter or margarine
    1 dill pickle

Directions

Baked the potatoe in microwave until fork tender. Mix peas, carrots, chopped dill pickle, and mayo in a cup. Split it in half but do not seperate the halves. Mash theinside of the potatoe in the skin. Spread butter, sprinkle the cheese. Pour the mayo and veggie mixture in the potato. Enjoy your meal. Serves 1 person.
