    1 C dried mung beans
    5 C vegetable broth
    1/2 tsp turmeric
    1 tsp cumin
    1/2 tsp curry powder
    1 tsp garam marsala
    2 Tbsp olive oil
    1 medium red onion, chopped
    3 garlic cloves, minced
    2 large tomatoes, chopped
    1 small serrano pepper, chopped
    1 C light coconut milk
    1/2 c minced fresh cilantro


Place mung beans in a pot with the cold water. Simmer until the beans are tender, about 40 minutes. Combine the turmeric, cumin, curry powder, and garam masala, and set them aside.

In a large pot, heat the oil over medium high heat. Saute the onion until golden brown. Reduce the heat to med low, add the garlic, tomatoes, and ginger and saute for 1 minute. Add the combined spiced and sliced serrano pepper; saute for 1 minute. Add the beans and their liquid to the pot witht he vegetables and spices. Add the coconut milk. Simmer the soup uncovered for 15 minutes over low heat. Stir in cilantro.
