4 large poblano peppers sliced lengthwise and seeded
    1 28 oz can tomatoes
1 15 oz can black beans, drained and rinsed
2 ears corn, cut from cob
    6 oz queso fresco
1 cup Mexican 4 cheese blend
    1 jalapeno, diced
    1 large onion, diced
    2 cloves garlic
    1 t olive oil
    chili powder
1 7oz can chipotle in adobo or chipotle salsa

Preheat oven to 400.

Saute garlic and onion in olive oil until tender. Add corn and cook for 2 minutes. Add chili powder, salt and pepper to taste. Add chipotle in adobo or salsa to taste, about 1/2 cup.

Mix onion mixture with queso fresco and beans. Add half the can of tomatoes to the bottom of a 9 x 12 baking dish. Stuff poblano halves with mixture and pour the rest of the tomatoes on top of the peppers. Bake covered for about an hour or until peppers are tender. Uncover and sprinkle with the mexican cheese blend. Cook 5 more mins or until cheese is melted.

Serve with fresh lettuce, tomatoes, chipotle in adobo and sour cream if desired.
