Introduction

These delicious cupcakes are only 1 WW point each and very easy to make! These delicious cupcakes are only 1 WW point each and very easy to make!
Number of Servings: 24

Ingredients

    1 box of lemon cake mix
    1 12-oz. can of diet citrus soda
    48 raspberries, divided
    1 1/2 cups light Cool Whip

Directions

Mash 24 of the raspberries and place in a large bowl. Add a splash of the soda. Add the cake mix, then the rest of the soda. Stir until blended, but not too much - the mixture should still be bubbly from the carbonation.

Divide among 24 cupcake tins. Bake according to the box directions - be aware that you will have to cook them a little longer, as they are very moist.

Let cool completely. Top each cupcake with 1 Tbsp of Cool Whip and one whole raspberry.

Makes 24 cupcakes.
