Like all of mamaCD's recipes, its quick, easy, nutritious fit for low carbers and the whole family. Like all of mamaCD's recipes, its quick, easy, nutritious fit for low carbers and the whole family.
Number of Servings: 1

Ingredients

    2 eggs (beaten)
    1 small sausage link, chopped (any kind is fine)
    1/2 T onions, chopped(green onions preferred)
    1 T green peppers, or brocolli, chopped
    1 t olive oil (alternate oil is fine)
    1 ou cheddar cheese (grated)

Directions

place eggs in oiled skilled over medium heat
sprinkle sausage, onions, green peppers on top
cook over medium heat, add salt, pepper, garlic (if desired)
sprinkle grated cheese on top
when almost cook, gently fold in half
