Low fat and meatless mushrooms Low fat and meatless mushrooms

    mushrooms 10 medium
    parsley 1 tbsp
    onion 1 tbsp
    Parmesan cheese 1 tbsp
    plain bread crumbs - 2 oz.
    water about 1/2 cup more or less
    Pam cooking spray


Clean mushrooms. Remove stem and dice, place in a small bowl.
In a medium frying pan sprayed with Pam, add mushroom caps stem side up and stir until a little bit brown. Add water and cook until mushrooms are soft, about 5-10 minutes. Turn them over once or twice, but finish stem side up.
Remove soft mushrooms to a small oven proff dish.
Take diced mushroom stems and chopped onion and cook in the water in the fry pan , adding more water if needed. Add the breadcrumbs and combine all together. Put this into the mushroom caps. Sprinkle with parsley and Parmesean cheese.
Bake in 350 oven 5-10 minutes.
makes 10 stuffed mushrooms, one each per serving.

You could always replace the water with chicken broth or even some melted butter but I wanted to make this low calories/low fat. The original recipe was loaded with cheese and butter, a no no for me now!
