    1 lb lean ground beef
    1/2 cup chopped onion
    1/3 cup grated carrot
    1/2 cup old fashioned oatmeal (I used McCanns Instant)
    1 egg - beaten
    1/3 cup ketchup
    1 tsp salt (I used LITE SALT)

Pre-heat oven to 350 degrees
Place all ingredients into a loaf pan
Mix all ingredients and form a loaf
Pat until even

I poured a small can of mushroom stems & pieces over the entire meatloaf and also topped with a swirl of ketchup

When halfway thru baking, I poured 3 oz of tomato juice over and around meatloaf.

I love meatloaf so was anxious to try it. My son and 2 grandchildren were here for dinner and the raved about it.
