Introduction

Colorful and wonderful vegetarian side dish. Brings out the sweet in the carrots. Colorful and wonderful vegetarian side dish. Brings out the sweet in the carrots.
Number of Servings: 3

Ingredients

    5 or 6 carrots - slice the carrot in thirds, then halve those parts, then slice them into smaller portions (like large matchsticks)
    3 tsp or so ground thyme
    salt to taste
    pepper to taste
    4 tsp minced garlic
    2 tbs olive oil

Directions

Slice carrots
Put oil in pan, heat - add garlic.
Add carrots, let cook over medium heat til browned on one side. Add thyme, salt, pepper, stir occasionally til the carrots have some color, and are between raw and soft - tender. Really it's up to you how you like your carrots!

Makes 3 servings of just under 1 cup.
