Ingredients

Ingredients:
* Soba Noodles, 230 grams
* Garlic, 2 clove
* Sesame Oil, 2 tbsp
* Mushrooms, fresh, 1.5 cup, pieces or slices
* Carrots, cooked, 1 cup slices
* Spinach, fresh, 1 package (10 oz)
* *Soy Sauce, 1 tbsp
* Spinach, fresh, 1 package (10 oz)
* Scallions, raw, .25 cup, chopped
3 tbsp water.
Directions
Cook the Soba noodles 8 to ten minutes or until tender. Drain and rinse well with cold water.
While the noodles are cooking heat oil in a skillet and saute the garlic for 1 minute.
Add mushrooms, carrots and 1/2 tbsp soy sauce.
Saute for 2 more minutes.
Place the noodles on top of the vegetables.
Set the spinach on top of the noodles and add 3 tbsp of water and remaining soy sauce.
Cook for 3 minutes until spinach is wilted and the soba noodles are warm.
Toss mixture.
Sprinkle scallions on top for garnish.
