Introduction

These are slightly sweet. I might increase the sugar next time. I sprinkled a bit of sucanat on the tops, but this is not included in the nutritional info. These are slightly sweet. Number of Servings: 48

Ingredients

    2 cups white whole wheat flour
    1/2 cup sucanat
    1/2 cup cocoa powder
    1 Tbsp baking powder
    1/2 tsp cinnamon
    1/2 tsp salt

    1 large egg
    2 Tbsp sunflower oil
    1 cup vanilla soymilk
    1 1/2 cups cooked pumpkin

Directions

Preheat oven to 400 degrees.
Whisk together dry ingredients in a large bowl. Beat egg. Add other wet ingredients to beaten egg. Add wet ingredients to dry and mix. Put in greased mini muffin pans. Bake for 15 minutes.
Makes 48 mini muffins.
