Number of Servings: 8


    2 cups chicken, chopped
    2 oz. tortilla chips, crushed
    1/2 cup onion, chopped
    1 can cream of mushroom soup
    1 can cream of chicken soup
    1 can green chili enchilada sauce, mild
    1 can green chilis, chopped
    1 can evaporated milk
    1 can black beans
    1 cup cheddar cheese, shredded


Crush chips and cover the bottom of a9x13 pan. Saute onions and chicken in a pan with a little cooking spray until chicken is done. Sprinkle chicken and onion mixture on top of the chips and beans on top of the chicken. Mix the soups, sauce, milk and chilis and pour over layers in pan. Bake in 350 degree oven for 20 minutes or until bubbly. Add the cheese on the top and cook for 10 minutes more. Let cool 5 minutes before serving.
