    Beef chuck, 2 lb cubed
    Morton Iodized Salt, 1/2 tsp
    Pepper, black, 1/2 tsp
    Butter, unsalted, 1 stick
    Green Onions, 4 white ends only
    All Purpose Flour, 5 tbsp
    Beef Broth 1 can
    Mustard-Grey Poupon Dijon Mustard, 1 tsp
    Canned Sliced Mushrooms 4 oz
    Sour Cream 1/3 cup
    100% Whole Wheat Rotini, 3 cup


Remove fat and gristle from 2 lb boneless beef chuck cut 1/2" thick. Sprinkle with salt and pepper. Add 1 stick butter to heated skillet. Put meat in and saute quickly. Push to one side; add 4 sliced onions (white part only) and cook til transparent. Push aside and stir in 5 T flour. Add can of condensed beef broth. Boil. Turn down heat and add 1 t Dijon mustard. cover and simmer for 1 hour. Five minutes before serving, add 4 oz can of drained sliced mushrooms and 1/3 cup of sour cream. Salt to tast and serve over rice or noodles.
