I stole this from Kraft but used less stufing for lower carbs. I stole this from Kraft but used less stufing for lower carbs.
Number of Servings: 8


    1.5 lbs chicken breast, diced into 1 inch cubes
    8 oz. 2% Mozzarella Cheese, Shredded
    1 Box Dry Wheat Stuffing Mix for Chicken
    14.5 oz. can Diced Tomatoes, No salt added
    1 Garlic clove, minced
    1/2 C Water


Preheat Oven to 400.
In a casserole dish (I used smalled than 9x13) put all the diced chicken down.
Sprinkle Cheese on top of chicken.
In a bowl mix 1.5 cups stuffing with 1 can diced tomatoes, 1/2 Cup water and minced garlic.
Spread bowl mixture on top of chicken and cheese.
Bake in oven for 30 minutes.

  • I too found this recipe on the Kraft Food site & it is so good. There are only two of us so I split this into four 2 serving portions & freeze for a quick dinner with a side salad or fresh/steamed veggie. We LOVE this :-) - 6/20/09
