Introduction

An incredibly easy and quick dinner. An incredibly easy and quick dinner.
Number of Servings: 4

Ingredients

    1 cup chopped onion
    2 cup chicken broth
    1 cup skim milk
    2 cup minute rice
    0.25 cup parmesan cheese
    1.5 cup cooked shrimp
    About 2 cups chopped veggies (ie mushrooms, peppers, celery)
    0.25 cup white wine (optional, if using add a handful more rice or subtract 0.25 cup broth)
    2 tbsp olive oil
    1 tbsp sesame oil (optional)
    1 tsp oregano
    1 tsp basil
    0.5 tsp cayenne pepper

Directions

1) Add olive oil and onion to pan, cook until translucent.
2) Add 2 cups shopped veggies, sesame oil if using, & spices. Cook 5 min.
3) Stir in broth, milk, and wine if using.
4) Bring to a boil over medium heat.
5) Stir in 2 cup minute rice & simmer for 5 min over low heat.
6) Stir in 0.25 cup parmesan. Let stand 5 min.
Makes 4 servings.
