    olive oil
    2 cloves garlic, minced
    1/2 onion, chopped
    1 large carrot, chopped
    3 stalks celery, chopped
    2 heads broccoli, chopped
    2 large zucchini, sliced
    2 roma tomatoes, diced
    Italian seasoning
    1 cup lentils
    1/3 cup barley
    4 cups veggie broth
    2 cups water
    1/3 cup burgundy cooking wine


Saute onion, garlic, carrot, and celery in olive oil.

Add broth, water, lentils, barley, Italian seasoning, and wine and cook until lentils are soft, about 30 minutes.

Add broccoli, zucchini, and tomatoes and cook until just tender, about 5 minutes.
