Introduction

Number of Servings: 8

Ingredients

    5-6 white potatoes, medium size
    32 oz vegetable or chicken broth
    1 onion, diced
    1 tsp salt
    1 tsp black pepper
    1/4 cup flour
    1/2 cup whole wheat flour
    2 cups cold water
    1/2 cup half-and-half
    12 oz nonfat evaporated milk
    1.5 sticks unsalted butter

Directions

Peel potatoes; dice; and boil w/ plenty of water. Drain and set aside.

In large pot, add broth, onions, salt & pepper, and water. Simmer 20 minutes.

In small pot, melt butter; add flour gradually - stirring constantly. Add slowly to broth mixture in large pot.

Add half-and-half and evaporated milk, slowly.

Simmer for 20 more minutes.

Add potatoes and serve. Top with shredded cheese, green onions, or bacon crumbles if desired.
