Introduction

This is from a crock pot thread at Weight Watchers. Haven't tried it yet, but sounds great! There is a similar recipe on here, but I added corn to it, and also doubled the recipe to feed 12. Ingredients

    2 lb. 93% lean ground beef
    2 C chopped onions
    28 oz. (lg. can) Hunt's petite diced tomatoes, undrained
    1 can whole kernel corn, no salt added
    1 (10 3/4 oz.) can Healthy Request Tomato Soup
    1 (14.5 oz.) can Amy's Organic Low Fat Cream of Tomato Soup
    2 (5.5 oz.) cans low sodium V8
    4 t chili seasoning
    1 (16 oz.) can light red kidney beans, rinsed and drained
    2 C. uncooked elbow macaroni

Directions

In a large skillet sprayed with olive oil flavored cooking spray, brown meat. Meanwhile, in a slow cooker container sprayed with cooking spray, combine onion, undrained tomatoes, corn, tomato soup, V8 juice, and chili seasoning. Stir in kidney beans and uncooked macaroni. Add browned meat. Mix well to combine. Cover and cook on low for 6 to 8 hours. Mix well before serving.

Serves 12 (1 full cup).
