Introduction

kind of like a vegetarian version of chicken salad... SO yummy :) kind of like a vegetarian version of chicken salad... SO yummy :)
Number of Servings: 3

Ingredients

    ! bag of frozen cauliflower (you can also use one head of fresh)
    2tsp yellow mustard
    1.5 tbsp Light Mayo
    .5 tsp celery salt
    6 slices of rye bread
    1 cup grated/shredded carrots

Directions

Boil cauliflower until slightly overdone- nice and soft
Mash cauliflower with fork or potato masher
Add mustard, mayo, and celery salt and mix well.
Toast rye bread.
Spread a third of the cauliflower mixture on to each of 3 slices of bread.
Top with grated carrots and other slice of bread.

*Sometimes I use dijon mustard instead of yellow. Both ways are really tasty :)
