    1 can (14.5oz) petite cut diced tomatoes, undrained
    3 stalks celery, sliced
    1 cup chopped carrot (circles)
    1/2 cup chopped onion
    1/2 cup frozen corn
    1/2 cup frozen peas
    1/2 cup frozen cut leaf spinach or beans
    3 cups chicken broth
    2 tsp sugar
    1 teaspoons salt
    1/2 teaspoon pepper
    1/2 teaspoon rosemary
    1/2 teaspoon basil
    1/2 teaspoon parsley
    2 bay leaves
    2 tbsp flour
    2 tbsp oil
    1/4 cup hot water

    (opt: also add 2-4 cups finely diced potatoes with or w/o skin, turnips, or other veggies)


1 - Place all ingredients (except cornstarch and oil) in large soup kettle.

2 - Simmer for 45 min.

3 - Stir together flour and oil. Whisk in hot water. Add to soup. Boil for 2 minutes or till soup is slightly thickened.
