    Red Peppers, 2
    Onions 1/2c chopped
    2 Garlic Cloves
    2 tbsp Tomato Paste
    1/2 lb lean ground turkey
    Yellow Sweet Corn, Canned, 1 cup
    Brown Rice 3/4 cup
    Worcestershire Sauce, 2 Tbsp
    Parsley, fresh, 1/4c chopped
    Grated Mozzarella Cheese, part skim milk, 2 oz (remove)
    Salt and Pepper to taste


Cut peppers in half lengthwise and remove seeds. Place in microwave safe bowl, cover with plastic wrap and microwave on hi for 5 minutes. Rinse with cold water and set aside.

In non-stick fry pan, saute onion and garlic for 2 minutes. Add ground turkey, tomato paste and corn, stirring frequently. Cook for 5 minutes on medium heat. Add rice, worcestershire and parsley and cook for 2 minutes on low heat.

Fill each pepper with 1/4th of cooked turkey mixture. Sprinkle with 1 tbsp of cheese and microwave on hi for 2 minutes.
