Introduction

This is not a low calorie food. This should be eaten on a rare occasion for a treat. I am making it for a friend who had surgery. This is not a low calorie food. This should be eaten on a rare occasion for a treat. I am making it for a friend who had surgery.
Number of Servings: 24

Ingredients

    12 cups whole milk
    2 sticks butter
    1/2 cup flour
    8 baked potatoes
    16 ounces medium cheddar cheese, shredded
    1 pound bacon, cooked and crumbled

Directions

In large stockpot, melt 2 sticks of butter. Then add flour to thicken. Slowly stir in 12 cups of milk and bring to a simmer.

Cut open the baked potatoes and remove the potato from the skin. Add all of the potato pulp to the soup.

Add the cooked, crumbled bacon to the soup. Then, add all of the shredded cheese and stir until smooth.

Simmer all ingredients for 30 minutes. If desired, you can transfer the soup to a crock pot set on warm to keep it warm and smooth until ready to serve.

Makes 24 servings.
