Introduction

I just found this in a magazine. OF course, I've changed it slightly because we like spicier food, unfortunately, there is no fiery chili oil listed in the ingredients here.. I'm sure there's a way to add it. I just found this in a magazine. Ingredients

    1 lb chicken breast cut into 1/2 inch pieces
    1 tsp Fiery Chili oil
    red pepper flakes, to taste
    2 tbsp sesame oil
    4 oz shitake mushrooms sliced thinly, I leave the stems and slice those as well
    1/4 c soy sauce (** I use Tahari Organic Wheat Free to lower my carbs, there's no molasses or wheat)
    4 c chicken stock (low sodium)
    1 in piece ginger root grated
    3 scallions sliced, separate the white and the green parts

Directions

In a large wok or very large skillet, heat up the sesame oil. Throw in the white parts of the scallions, the ginger and the mushrooms. Cook until mushrooms are soft.

Once they are soft, add the stock and the rest of the ingredients. Cook until the chicken is cooked throughout.

Add the green scallions and serve.
