Ingredients

    2 t. extra-virgin olive oil
    2 cloves garlic, minced, or 1 shallot minced
    2 t. finely chopped fresh rosemary leaves
    2 c. shelled edamame beans
    1 small summer (yellow or crock neck) squash, coarsley grated
    1 small zucchini squash, coarsely grated
    1 large carrot, peeled and coarsely grated
    4 oz Pecorino Romano cheese, coarsley grated
    1/4 c. chopped fresh parsley, or arugula or watercress
    1/4 t. kosher salt
    1/4 t. freshly ground black pepper

Directions

Put all ingredients in a large bowl and toss to mix well. Serve chilled or at room temperature.
