Number of Servings: 12


    1 c white flour
    1 c whole wheat flour
    1 tsp baking powder
    1/2 tsp baking soda
    1/4 tsp salt
    1 egg beaten
    1/3 c shortening
    2 tsp grated orange rind
    1 can mandarin orange, drained
    1/2 c orange juice
    1/2 c plain yoghurt


In a medium mixing bowl, sift together the first five ingredients.

Cut in shortening until mixture resembles corse crumbs. Stir in orange rind and mandarin oranges

In a small bowl mix orange juice, yoghurt and egg until blended. Add to dry ingredients and stir until moistened.

Spoon batter into 12 paper lined muffin cups.

Bake in 400 degree oven for 20 minutes or until toothpick comes clean.
