    8C Veg broth
    2 - 15 oz. diced tomatoes
    1 can tomato paste
    1 bunch of kale
    2 - 15 oz. kidney beans or chickpeas


Heat olive oil in large soup pot; cook the onion & garlic til soft. Stir in chopped kale & cook until wilted, about 2 min. Stir in everything except the beans. Simmer soup on medium heat for 15 minutes. Stir in beans & cook 10 more minutes. I add a 1/2 cup of cooked quinoa to each bowl of soup. I cook the quinoa beforehind.
