    1 cup flour
    2 tsp baking powder
    good pinch cayenne pepper
    1/2 tsp salt,
    2 tbsp crumbed lard
    50g tasty cheese grated
    3/4 cup milk


Mix all dry ingredients with a hand whisk until light and well mixed. Add lard and chesse mix again. Make a well in the centre and gently mix in the milk.
Spoon into dumpling shapes on the top of a casserole you are preparing. Cook with lid on for softer, or lid off for crispy top for 30 mins. Serves 6.
