Ingredients

    4 medium Potatoes baked
    1c. low-fat cottage cheese
    1/2 c skim milk
    2 T. minced onion
    1 each pepper, salt, paprika & dried parsley flakes

Directions

Bake or microwave potatoes, cut in half and scoop out the potato leaving the skin intact. Mix milk, cheese, onion, salt, pepper, parsley and potato ingredients together. I use a food process to mix. Sprinkle paprika on top. Bake at 400 degrees fro 10 minuites until golden. (These may be frozen and used later)
