Chicken, vegetables, cheese, and condensed soup, make this deliciously healthy recipe, that uses up leftovers. I use it with the left over chicken from making chicken soup or leftover turkey after Thanksgiving. Ingredients

    cooked chopped chicken about 2 cups
    2 onions
    1 package of fresh mushrooms
    fresh or frozen broccoli, rough chopped
    olive oil 1 tablespoon
    salt and pepper
    1 package of shredded cheese (any type I use cheddar often)
    1 can condensed cream of mushroom soup (can use the low fat one)
    1 can of condesed cheddar soup (or velveeta or cheese whiz)
    Cooked white rice (about 2-3 cups).

Directions

1. Cook rice.
2. Meanwhile, prep and steam broccoli (I use a microwavable steamer)
3. Sautee onions and mushrooms in oil salt and pepper. Add other vegetables if you like (celery, carrots, or zucchini work well)
4. cut up chicken.
5. spay large glass oven-safe baking dish with pam.
6. Combine all ingredients in glass dish.
7. bake for 35-45 minutes. ( can be made in advance and refrigerated, but bake for 1 hour instead).

Makes 8 or more servings, depending on the portion you give.
