    Spinach, fresh, 3 bunch
    Butter, unsalted, 2 tbsp
    Shallots, 3 tbsp chopped
    Garlic, 1 tsp
    Pepper, black, .5 tsp
    Nutmeg, ground, .25 tsp
    Heavy Cream .5 cup
    Salt, .75 tsp


Boil a large pot of water. Make sure to put some salt in the water. (Not the same salt called for in recipe.) Cut stems off spinach and chop roughly. Put spinach in water and cook for 2 minutes. Remove spinach and strain, making sure to remove as much water as possible.
Melt butter in large pan. Add shallots and garlic and let cook for 3 minutes or until fragrant. Add spinach, salt, pepper and nutmeg. Stir well. Add cream and let cook until cream is reduced- about 4 minutes. Serve immediately.
