Ingredients

    2 cups whole wheat flour
    1/4 cup wheat germ
    1/4 cup flax meal
    1and 1/2 tsp baking soda
    1/2 tsp salt
    1/2 cup sliced almonds
    1/2 cup brown sugar blend
    2 egg whites
    1/2up apple sauce
    1 cup milk
    1 tsp vanilla
    2 cups diced rhubarb

Directions

Mix dry ingredients. Beat egg whites and mix in applesauce, vanilla and milk. pour into dry ingredients and mix until moistened. fold in rhubarb.
Makes 18 large muffins.

    This was like a bran muffin which is not what I was expecting. I did not get enough rhubarb taste, which is what I was hoping for. Also, the recipe was not complete in mentioning the temp. and time for baking. - 7/3/08
