Ingredients

8 ounces portabella baby mushrooms
2 tbsp Dried tomato and garlic pesto mix
1 tbsp olive oil
2 tbsp grated parmesan
1/3 c bread crumbs
1/2 cup imiation crab meat (flake or stick)
Directions
Combine pesto mix w/ 1 tbsp oil, 3 tbsp water, breadcrumbs, and parmesan cheese. Add enough water so mixture is moist but not runny. Stem and clean mushrooms. Mince stems. Mince crabmeat. Sautee mushroom stems in a few tsp water until soft. Add prepared pesto mix and mix thoroughly. Remove from heat and stir in minced crab meat. Stuff mushroom caps. sprinkle with a bit of extra breadcrumbs and parmesan cheese if desired. Spray pan lightly with cooking oil, bake at 350 for 20 minutes. Serving size is per mushroom, based on 12 mushrooms per 8 oz, so recipe feeds about 3-4 people as a side dish.
