Ingredients

    ~ Hominy, 2 cup
    ~ Pork Ribs, country style, 16 oz
    ~ Beef broth, bouillon, consomme, 4 cup
    ~ Water, tap, 3 cup (8 fl oz)
    ~ Lea & Perrins, Worcestershire Sauce, 2 tsp
    ~ Green Chili Peppers, canned, .5 cup
    ~ Tomato Paste, 0.5 cup
    ~ Canned Chipotle Peppers in Adobo Sauce (2tbspn), 1 serving
    ~ Garlic powder, 1 tbsp
    ~ Garlic Salt, 1 tsp
    ~ Pepper, black, 1 tbsp

Directions

Preheat Oven to 300 degrees. In a large bowl mix together Tomato Paste, Worcestershire Sauce, Canned Chilles, Chipotle Peppers, Salt, Pepper, & Garlic Powder together. Cut Pork into large bite sized pieces and toss in tomato mixture. Line baking dish with a few long pieces of foil so you can make a pouch once the pork has been poured into it. Wrap sides of foil over pork mix and roll ends to make a nice pouch. Flip over and puncture 3 or 4 times to vent. Bake for apx. 4 hours. Pour beef broth and water into pot. Season to taste with additional salt and pepper. Pour in Hominy and carefully place the pork into the broth. Make sure to add ALL juices from the pork pouch into the soup as well as this will have A LOT of your flavor in it! Cook on medium hi heat for at least 20 minutes before serving.
You can fry up some shreds of corn tortillas and add to your soup as well as diced green onions, white onions, shredded cheese, or a dollop of sour cream are all great with this! ENJOY!
