Ingredients

    3 1/2 cup uncooked macaroni
    4 tbsp margarine, divided
    3 tbsp all purpose flour
    3 cups milk (1/2 1% and 1/2 2% used)
    2 1/2 cups Tex Mex shredded cheese blend, divided
    3/4 cup grated Parmesan cheese, divided
    1/2 tsp salt
    1/2 tsp pepper
    1/2 cup dry bread crumbs

Directions

Cook pasta according to package directions. Meanwhile, in a Dutch oven, melt 3 tbsp margarine. Str in flour until smooth; gradually add milk. Bring to a boil; cook and stir for 2 minutes or until thickened. Add 2 cups Tex Mex cheese, 1/2 cup parmesan cheese, salt and pepper.
Drain pasta. Add to cheese mixture; toss gently to coat. Transfer to a greased 11x7 inch baking dish. Melt remaining margarine; add bread crumbs and remaining Tex Mex and Parmesan cheeses. Sprinkle over top. Bake, uncovered, at 400 degrees for 20-25 minutes or until golden brown. Yield: 9 servings.

    This is a GREAT recipe. I make a similar version but I saute some minced onions and a clove of minced garlic in the margarine to add a kick of flavour. To prevent that gritty texture do not add the cheese until the milk is thickened and bubbly. Sometimes I add tuna or chicken to make a casserole - 2/23/10
