Introduction

This is a spin off of one of the recipes I found in Spark recipes using foods I had available and trying to make it less fat. Still very delicious. This is a spin off of one of the recipes I found in Spark recipes using foods I had available and trying to make it less fat. Still very delicious.
Number of Servings: 8

Ingredients

    6 boneless, skinless chicken thighs
    1 T Olive Oil
    1 Onion, about 2 cups raw
    1-4oz can of green chilies
    2-3 T Chili Powder
    2-3 t Ground Cumin
    Ground red Pepper to taste
    Little salt and pepper to taste
    4 oz fat free cream cheese
    8 Burrito size flour tortillas
    1-10 oz can green chili enchilada sauce
    1 C light sour cream
    1/2 C Fat free cheddar cheese

Directions

Chop onion. Add olive oil to pan and saute onion for 2-3 minutes. Add green chilies and chopped chicken. Season with chili powder, cumin, ground red pepper and salt and pepper. Cook, until chicken is cooked through. Add cream cheese to chicken and veggie mixture until mixed. Add filling to the 8 tortillas and roll into enchiladas. Spray with non stick cooking spray or non stick aluminum foil a 9x13 pan. Place enchiladas in pan. Mix sour cream and chili sauce together and pour over made enchiladas. Bake at 350 degree oven for 30-40 minutes. Cover with cheddar cheese for the last 3-5 minutes until cheese is melted and enchiladas are heated through.
Makes 8 servings = 1 enchilada
