Ingredients

    *Ancient Harvest Traditional Whole Grain Quinoa, 1 serving =.25 cup dry, 0.75 cup (remove)
    *Canola Oil, 1.5 tbsp (remove)
    Onions, raw, 0.25 cup, chopped (remove)
    Mixed Vegetables, frozen, 0.4 package (10 oz) (remove)
    *Cumin seed, 1 tsp (remove)
    Ginger Root, 1 tsp (remove)
    Peanuts, dry-roasted, 0.25 cup (remove)
    Mustard seed, yellow, 1 tsp (remove)

Directions

Soak quinoa for 20 min and then and rinse. Boil in 2X water until it becomes dry and the grains develop tails.

Heat oil. Add mustard and cumin seeds. When the mustard starts spluttering add a pinch of hing and chopped onions. When onions look transluscent add frozen vegetables and grated ginger. Add the quinoa and stir after the vegetables have cooked tender. Add cumin powder and crushed peanuts. Stir and serve hot.
