Ingredients

    *Extra Light Olive Oil, 1 tbsp
    Onions, raw, 1 cup, chopped
    Carrots, raw, 2 large (7-1/4" to 8-1/2" long)
    Red Ripe Tomatoes, 1 large whole (3" dia)
    Celery, raw, 3 stalk, large (11"-12" long)
    Garlic, 6 cloves
    Thyme, ground, 1 tbsp
    Light Beer, 12 fl oz
    Beef broth, bouillon, consomme, 2 cup
    Parsley, 4 tbsp
    Beef ribs, 1 lb

Directions

brown short ribs in olive oil, salt and pepper. When ribs are browned on all sides take out and set aside, to large stock pot deglaze pan with red wine or beer, then add veggies and stock. Place ribs back into pot and simmer on low 3 hours until meat starts to fall off bones
