Introduction
My family has made this recipe for many, many years, but always with too much meat and sauce (which is really just mushroom soup). To lighten it up, I replaced most of the soup with fat free sour cream and fresh mushrooms, and cut the kielbasa in half. To add fiber, I used small potatoes and kept the skin on. Please note that the sodium is high. This is from the sauerkraut. If you rinse and drain the sauerkraut in cold water before cooking, much of the salt is removed. This recipe is easy to make in the slow cooker. Put it on low before work, and come home to yummy Polish food! Ingredients

16 oz can of sauerkraut
1 can condensed cream of mushroom soup, reduced sodium
4 cups fresh mushrooms, sliced
1 lb baby red potatoes, washed and cut into pieces
8 oz smoked polish sausage, cut into bite sized pieces
3 tbsp fat free sour cream
2 tsp caraway seeds, crushed slightly to release flavor
Directions
Mix the soup, sour cream, mushrooms and caraway seeds in a bowl until mixed. Put all ingredients in slowcooker or crock pot and stir as well as you can. It will be thick and may not stir easily until it's had a chance to cook. Cook for 8-10 hours on low.
Makes 4 1.5-cup servings.

We liked this. I think next time I will use a thickener of some kind as it was really soupy. I will also saute the meat first in a nonstick pan first as I like that flavor. We left out the sour cream because of an allergy. Im guessing it would be even better with it though. Will make again! - 12/29/10
