Ingredients

4 servings of brown rice (usually 4 cups)
5 servings of shrimp (5 cups)--We bought frozen
2 tsp canola or vegetable oil
1 cup chopped fresh or frozen broccoli
1 cup green or red bell pepper or combo of both
1 medium carrot, chopped
1 cup diced zucchini
1 cup diced yellow squash
.75 of an onion diced
4 tablespoons stir fry sauce (or sub soy, teriyaki, etc. sauce)
Directions
Thaw frozen shrimp by placing in cold water.
Cook rice according to directions on box (usually takes ten minutes).
While the rice is cooking, heat the oil in a pan. Add carrots and onions for 2-3 minutes, then add rest of veggies for another 5.
Add shrimp for another 5 minutes. Add rice and stir fry sauce and let simmer for 3 minutes.
Makes six 1.5 cup servings!
