    4 lbs. sirloin roast cut into small steaks
    3 cans mushrooms
    4 teaspoons hot water
    2 tbsp. dry mustard
    2 tsp. sugar
    ground black peppar
    1 tbsp. vegetable oil
    1 medium onino chopped fine
    table salt
    2 tsp. tomato paste
    8 teaspoons unbleached flour
    2/3 cup plus 2 tbsp. white wine
    3 cups beef broth
    1 cup sour cream


makes 12 servings

marinate meat in soy sauce.
mix water, dry mustard, sugar together and set aside
heat oil in extra large pan on medium high until smoking. cook 1/2 meat until browned on both sides. repeat with the rest of the meat. set meat aside
cook onions and mushrooms and teaspoon of salt until browned.
add tomato paste and flour stir until covered.
add broth, wine and mustard mix heat to boil and reduce heat to medium low simmer until reduced and thickened.
while sauce reduces cut meat into bite size pieces.
return meat to pan and cook until meat is heated through
remove pan from heat and add sour cream.
serve immediately
