    Whole Wheat Pasta - linguine, spaghetti, or angel hair, 4 oz. dry

    Pam Organic Canola Oil cooking Spray, 0.27 gram(s)
    Shallots, 4 tbsp chopped
    Garlic, 4 cloves

    White Wine, 2 fl oz
    Parsley, dried, 3 tbsp
    Basil, dried, 2 tbsp.
    Thyme, ground, 0.5 tsp
    Chunk Light Tuna in Water, 1 can drained

    Red Ripe Tomatoes, 3 plum tomatoes chopped
    Spinach, fresh, 2 cups chopped
    Salt, 2 tsp or to taste
    Olive Oil, tsp.

    Parmesan Cheese, hard, 1 oz grated (optional)


- Boil water and cook pasta to desired tenderness.
- Coat sauce pan with cooking spray
- Saute shallots for a few minutes.
- Add finely chopped garlic and allow to cook until fragrant
- Add tuna and spices, mix well
- Add wine and allow alcohol to cook off - about 1 min.
- Add chopped tomatoes and cook 4 minutes
- Add chopped spinach and keep on heat just long enough for spinach to wilt.
- Salt and pepper to taste
- Toss with cooked pasta and drizzle olive oil over top
- Eat with finely grated Parmesan cheese if desired
